Ingredients
8 large medjool dates
8 smoked whole unblanched almonds
1 ounce cube manchego cheese, cut into 8 sticks

Preparation
Heat oven or toaster oven to 250°F. Line a small baking pan with foil. Cut a lengthwise slit in each date; remove pit. Stuff one almond and one stick of cheese into each date; place on baking pan. Bake 8 to 10 minutes or until warm. Serve warm or at room temperature.

Substitutions
Aged Asiago cheese may replace the Manchego.

Culinary Taste Tip
There are hundreds of varieties of dates, but the best is medjool. Look for fruits that are plump and dark brown in color. They're the ripest and most flavorful.

Culinary Technique Tip
Choose fresh whole dates and pit them yourself. It's very easy to do – just one slit down the center and gently remove the pit with your forefinger.
